Creamy Tomato and Cod Risotto:
3 cups of tomato soup or sauce
1 cup of water
1 cup of rice
4 cod fillets
1 bunch of cilantro
salt and olive oil
Add everything to the pot and bring to boil, once starts boiling lower to minimum and let the rice and cod to cook (around 15-20 minutes), stir every once in a while.
Once the rice and cod are cooked, serve topping with fresh cilantro leaves.
Banana Cupcake (gluten free, dairy free):
Ingredients (Muffin):
3 bananas
2 eggs
3 TBSP almond butter
1 TBSP maple syrup
1 TBSP cocoa powder
1 cup whole rice flour
1 tsp baking powder
1 tsp cinnamon
Preheat oven at 350°F or 180°C
Mix all dry ingredients for the the cake. In a different bowl stir together the wet ingredients. Add the dry ingredients to the wet, stirring until a batter is form. Place the batter into the muffin’s paper cup or mold and cook for 20 – 25 min. or until a toothpick comes out clean.
Once everything is cook, let it cool down completely.
Ingredients (Lavender coconut whipped cream frost):
1 can of full fat coconut milk, use only the solid (overnight in the refrigerator to separate the solid from the liquid)
1TBSP maple syrup
1 tsp vanilla extract
1 tsp edible lavender powder
Whisk together until frosting is thick and refrigerate until ready to use.
Decorate your cupcake with edible and organic flowers ( i used pansies and pineapple sage flowers)
